You probably donโ€™t like looking at that picture above. And I hear ya. But thatโ€™s what some of the streets look like in Paris. Itโ€™s something thatโ€™s become such a problem that the mayor of Paris has decided to try to tackle the issue, and I share his concerns, although progress is evidentially slow-going. But what confounds me, as well as others, is why doโ€ฆ

Chocolate Buckwheat Cake

I had some friends coming over last night for drinks and dinner. And then, one by one, each cancelled because their kids had gotten the flu thatโ€™s going around. So I was forced to eat all the lemons bars Iโ€™d made for dessert, which I didnโ€™t think would keep until the rescheduled night. (Actually, they probably would. But I knew it would be hard toโ€ฆ

French Honey

I had to put a moratorium on jam-making this year because I realized I had enough jam to last a normal person, who doesnโ€™t have a French partner, at least ten years. (Iโ€™m not naming any names, but one Frenchman in particular can go through half a jar at one breakfast alone.) But one thing I canโ€™t make is honey, in spite of the factโ€ฆ

How to Make Chocolate Bars

When I took pastry courses a number of years ago here in France and in Belgium, I tended to want to focus on the chocolate classes because โ€“ wellโ€ฆgosh darn it, I love it so much. Weโ€™ve become the best of friends over the years and I am never far from my bin of chocolate that I buy in bulk. (Although at some point, someoneโ€ฆ

Somehow, I have a lot of fat. Fortunately most of it is in my freezer. I love duck fat and if you havenโ€™t tried potatoes cooked in duck fat, I urge you to step away from the keyboard, go buy yourself a duck, render the fat, pluck some potatoes from your rooftop garden (if you live in Brooklyn), and fry them up. Thenโ€ฆOy!โ€ฆ as anyoneโ€ฆ

In Praise of Sesame Baguettes in Paris

I suppose Iโ€™m doing all those things the diet-police are advising against โ€“ namely having fat and carbohydrates for breakfast in lieu of โ€œhealthierโ€ options, like having a bowl of kale-flecked quinoa or downing a cilantro smoothie. But as much as I like fruits and vegetables (and herbs), the only thing I am able to face first thing in the morning is something a littleโ€ฆ

Ginger Crunch

Origins of recipes are often funny and some of the stories are doozies. Many are found in more traditional places, like handed over from friends and relatives, some are found in cookbooks, and others are our own creations. Then there are those that come from who-knows-where, such as the one I found on a menโ€™s room wall. And then thereโ€™s this one, which got handedโ€ฆ

Free Download of Paris Pastry Guide!

UPDATE: Welcome to my website. I created the Paris Pastryย app guide to feature and highlight hundreds of the best chocolate shops, bakeries, and pastry shops in Paris.ย Unfortunately the technology of building and maintaining the app eventually exceeded myย capabilities and it wasnโ€™t possible for me to update it as often as wanted to. Because of those limitations, and others, Iย made the difficult decision to remove theโ€ฆ
