Panzanella: Bread and Tomato Salad

Tomatoes didnโ€™t originally come from Italy, but theyโ€™ve certainly made up for lost time. Now itโ€™s hard to think of Italian cuisine without them, from classic dishes, from Pasta allโ€™Arrabiata and Salade Caprese, to Pizza Margherita and Panzanella, a bread and tomato salad thatโ€™s one of my favorite things to make, and eat. This summer salad gets tossed with basil, which boosts its appeal (atโ€ฆ

New York Restaurants and Bakeries

ย  Hereโ€™s a round-up of places I visited recently in New York City. One happy change (which is also happening in cities elsewhere) is the proliferation of excellent bakeries making top-quality artisan bread, as well as bakeries with a global focus. While Americans donโ€™t buy bread daily, as the French do, you can get terrific bread and pastries if you know where to look. Restaurantsโ€ฆ

My Favorite Utility Knife

I first wrote this post back in 2007. Yes, I know some of you may not have even been born yet, but I was well into my life as cook and baker, and shared what was one of my favorite knives at the time. Due to search engines, however, your past is always going to be hovering close to the present. One of the niceโ€ฆ

Le Petit Grain

A few months ago, I started following an interesting-looking Instagram account of a bakery in Paris that was making all their breads using natural leavenings, rather than commercial yeast. I didnโ€™t know anything about it, but not only were they showing impressive loaves of just-baked breads, but they were also experimenting with croissants made with levain (sourdough). The results looked promising. After they opened, Iโ€ฆ

Banana Bread

Iโ€™ve been thinking about Banana Bread lately, mostly due to an assortmentย of bananas that are taking up valuable real estate in my freezer. Another issue thatโ€™s taken up (valuable) space in my brain has been trying to understand theย difference between Banana Breadย and Banana Cake.ย Iโ€™ve been trying to come up with an explanation butย just canโ€™t think of one. Could just be the shape? But we donโ€™tโ€ฆ

Jerusalem Bagels

Iโ€™ve been meaning to make Jerusalem bagels ever since I went there, and saw the loopy breads dangling from wagons and pegs in shops. With all the hummus being consumed everywhere, it was easy to understand why so much bread was necessary. It was the perfect foil for scooping the stuff up, that somehow, kept showing up on tables wherever we went. (Note: These areโ€ฆ

Echo Deli in Paris

I donโ€™t get out for lunch as much as I used to, or want to, but a dizzying amount of cafรฉs, restaurants, and pastry shops have opened while I was holed up writing books. One that was getting an inordinate amount of good word-of-mouth, from friends and other restaurant owners, was Echo Deli. Entering the restaurant late morning, I was startled by the amount ofโ€ฆ

Seeded Multigrain Crackers

I love my trusty DSLR camera, but it weighs a ton, and lugging it even around my kitchen when Iโ€™m baking means Iโ€™m not as nimble as Iโ€™d like to be. (Iโ€™m a baker, not a photographer, as several people noted regarding my previous post.) So I treated myself to a new camera and am getting to work on making the pictures here more casualโ€ฆ.

Villebois-Lavalette Market

Staying with friends in the countryside for a few days last week, we were fortunate to discover that a neighbor wasย making his own bread, which was excellent. The young man bakes just a few loaves a couple of times a week. Romain, in his wisdom (a trait he may have picked up from me: buy as much as you can, when you come across somethingโ€ฆ
