Our Tour de France, Part 2

I, myself, have recovered better than my cameraโ€™s memory card, which is en route back to Sony, who said they would try to recover the rest of my trip photos. (Yes, I tried recovering software, none of which worked. And I passed on local outfit in Paris, who said they could give it a tryโ€ฆfor โ‚ฌ400 to โ‚ฌ1000.) So in lieu of me shelling outโ€ฆ

Our Tour de France

The French often say, โ€œThereโ€™s no need to leave France โ€“ we have everything here!โ€ While itโ€™s easy to brush it off as chauvinism, itโ€™s true โ€” for a country that could fit inside of Texas, there is a huge diversity of climates and terrains in one, single country. You can find everything in lโ€™hexagone, from the windy shores of Brittany (where weโ€™ve huddled aroundโ€ฆ

Chambelland Bakery (Gluten-free) in Paris

Iโ€™m not gluten-free, but I am a bread-lover. (fyi: I also like boulangeries, too.) And am happy to come across any kind of bread packed with grains. But I donโ€™t think all bread needs to have wheat in it. Other grains and starches โ€“ from buckwheat and rye, to cornmeal and rice flour โ€“ all make excellent breads, in the right hands. In addition toโ€ฆ

RAP Italian Epicerie in Paris

Due to our closeness to Italy, itโ€™s fairly easy to find an Italian รฉpicerie in almost any Parisian neighborhood. (Although locating an authentic Italian espresso is a little more elusive.) Iโ€™m fortunate because there are two excellent Italian รฉpiceries (speciality food shops) close to where I live, but most of the places get their items from a distributor, which means the selection is somewhat narrowโ€ฆ.

La Coop: Beaufort Cheese Cooperative in Paris

It amuses me to see outfits that promise to let folks โ€œโ€ฆexperience Paris like a local!โ€ While thereโ€™s lots to see and do here as a visitor, I wonder why so many people want to come and experience the more mundane aspects of life in a city, such as calling the gas company to find out why your bill is 300% over what it isโ€ฆ

Gluten-Free Baking and Substitutions

Iโ€™m thrilled when folks want to make recipes from this site and my books, including those who are gluten-intolerant or have celiac. However Iโ€™m the first to admit that gluten-free baking is not my area of expertise. So I canโ€™t usually say how and what to substitute in recipes that call for wheat flour. Wheat flour acts as a binder in recipes and gives cakesโ€ฆ

Things Iโ€™m Likingโ€ฆ

Les cassoles I love my everyday bowls, which were gifts from my friend Kate who lives in Gascony. Theyโ€™re from a semi-local potter which makes cassoles, the bowls for preparing Cassoulet. But Iโ€™ve loved these little fellas forever and use โ€™em for my daily soup and noodle bowls. Iโ€™ve posted pictures of them on the site and folks have asked me where oh where theyโ€ฆ

Chocolate Buckwheat Cake

I had some friends coming over last night for drinks and dinner. And then, one by one, each cancelled because their kids had gotten the flu thatโ€™s going around. So I was forced to eat all the lemons bars Iโ€™d made for dessert, which I didnโ€™t think would keep until the rescheduled night. (Actually, they probably would. But I knew it would be hard toโ€ฆ

French Honey

I had to put a moratorium on jam-making this year because I realized I had enough jam to last a normal person, who doesnโ€™t have a French partner, at least ten years. (Iโ€™m not naming any names, but one Frenchman in particular can go through half a jar at one breakfast alone.) But one thing I canโ€™t make is honey, in spite of the factโ€ฆ
