Recchiutiโ€™s Asphalt Jungle Mix

Michael Recchiuti was recently here in Paris for a few weeks, visiting, and eating his way around town. Because heโ€™s a chocolatier (from San Francisco), of course, he concentrated on chocolate. Interestingly I couldnโ€™t remember how we met, but he recalled the event pretty well. Apparently a group of us had been invited to Robert Steinbergโ€™s kitchen, since he was working on developing ScharffenBerger chocolateโ€ฆ.

Brown Bread Ice Cream

When I was in Ireland, after a wonderful dinner at an old country inn, I was served a big bowl of Brown Bread Ice Cream. I had heard about this unusual ice cream quite a while back and like Grape-Nuts Ice Cream, which is something apparently enjoyed in New England (although I was born and live there for eighteen years and never saw or tastedโ€ฆ

A Great Kouign Amann, in Paris

Iโ€™m not going to say a thing, because Iโ€™m certain I did the same thing back in the day. But a lot of people who are en route to Paris ask me where they can find things like bouillabaisse, a true salade Niรงoise, or Kig ha farz, and when I answer, โ€œYou canโ€™tโ€, they either donโ€™t believe me, or get irked because they think Iโ€™mโ€ฆ

Caramelized White Chocolate Ice Cream Recipe

Caramelized White Chocolate Recipe

I donโ€™t like to make promises I canโ€™t keep. So when I posted on my classes at the Lโ€™รฉcole du Grand Chocolat Valhrona, everyone began clamoring for the secret technique for the caramelized white chocolate that was shown. Technically, even though I didnโ€™t promise anything, I canโ€™t say I blame youโ€”if I saw a picture of it, Iโ€™d want to know how to make it,โ€ฆ

Dulce de Leche Recipe

The first time I had dulce de leche I began spooning it directly from the jar and into my mouth. And before I knew it, I had made it almost all the way through the jar. It was that good! I scraped it off the spoon with my teeth, savoring every sticky, sugary mouthful. The jar of dulce de leche I was given had aโ€ฆ
