Sometimes I think I am living in the wrong dรฉpartement of France. Donโ€™t get me wrong, Iโ€™m happy to be able to walk out my door and get a baguette Parisienne or a sachet of les macarons, libremente (freely). La Gruyere Double Cream

When I was at Macheret Fromage in Vevey, Switzerland, I noticed stacks of perfectly piped meringues, piled up to ceiling. I wondered why a cheese shop would have so many meringues? It wasnโ€™t until I headed way up in the alps, to the Maison de lโ€™Etivaz, where a Swiss traveling companion said โ€“ โ€œOoooh, La Gruyรจre double cream is very good. But very, very dangerous.โ€

Belt-Tightening

Summer is here in Paris. It arrived without warning last week and was brutal. It was hot, and it hit around 31ยฐ(about 88ยฐ) and so humid, I faced a real-meltdown of chocolate. And just about everything else around here, including me, suffered the same fate. Just when no one couldnโ€™t bear it anymore, it stopped. Then we had rain and cool weather. California Caramels: Little Flower Candy Company

Last year I read about a pastry chef-turned-candymaker in Los Angeles. She was becoming known around those parts for her tender caramels, blended with wisps of sel de mer (sea salt.)
