I remember when the movement started in America, and small chocolate manufacturers started popping up in the most unlikeliest of places by people curious about roasting and sourcing their own beans, then grinding them into smooth tablets of chocolate. Henri Le Roux in Paris

A favorite chocolatier of mine has finally made it to Paris, Henri Le Roux โ€“ although heโ€™s best known for his C.B.S. caramels, which are made in Brittany, a region known for its copious use of salted butter. Whenever Iโ€™ve traveled to that part of France, Iโ€™m always delighted at their lack of restraint, and they use salty butter in everything from buckwheat galettes, toโ€ฆ

Recchiutiโ€™s Asphalt Jungle Mix

Michael Recchiuti was recently here in Paris for a few weeks, visiting, and eating his way around town. Because heโ€™s a chocolatier (from San Francisco), of course, he concentrated on chocolate. A Visit to Fouquet Chocolate & Confections

ย  ย  Fouquet is one of my favorite shops in Paris. Iโ€™m absolutely addicted to the thin crisps of spice bread enrobed in dark chocolate as well as to the house-made pรขtes de fruits and the coconut-filled rectangles cloaked in chocolate. And, of course, the caramelized almonds, too. Itโ€™s rare to find a shop still making candies the old-fashioned way and I thought it wouldโ€ฆ
