Oatmeal Raisin Cookies

We seem to be going though an age of competitions and itโ€™s interesting for me to see so much fascination with being a chef, and people acting out on television what goes on (or they perceive goes on) in restaurant kitchens. I spent most of my life behind the stoves and let me tell you, itโ€™s often not pretty and I would not want anyoneโ€ฆ

Salted Butter Chocolate Chip Cookie

When I worked in the restaurant business, if you happened to walk in during staff meal, you could always tell who were the pastry people: we were the ones dousing our food with vinegar and salt. That is, when we had time to sit down and eat. I like sweets, but I like them tempered with something not-necessarily sweet, which is why sometimes youโ€™ll seeโ€ฆ

Baking Ingredients and Substitutions

Over the years, Iโ€™ve gotten many questions about substituting ingredients in recipes. Other times, people want to reduce quantities of ingredients. The main questions I get about substitutions are: Can I reduce the sugar in a recipe? How can I make a recipe gluten-free? Can I make this with a different kind of nut, or make it nut-free? What can I use in place ofโ€ฆ

Momofuku Milk Bar

I sometimes think about stepping back into the restaurant world. I miss being around all that energy and cooking alongside others instead of toiling in the kitchen all by my lonesome (โ€ฆand with you, of course). But itโ€™s nice to bounce ideas off of others and do more involved presentations, plus Iโ€™ll admit, I miss having a team of dishwashers on staff just as muchโ€”orโ€ฆ

I Love Macarons!

For some reason, the world went a little nuts for Parisian macarons in the past year and everyone, from New York to New Delhi, seemed to be fascinated by these little sandwich cookies. Notice that I said โ€œParisianโ€ macarons, since you wonโ€™t find these too far outside of Paris. Folks in the rest of France make more traditional macarons, made from a simple meringue withโ€ฆ

Crepes Dentelles

When I worked at Chez Panisse, we had a customer who would come for dinner several nights a week and eat downstairs in the kitchen. Jean lived by herself in San Francisco and took a cab across the bridge to Berkeley for dinner once or twice a week. When the waiters knew she was coming, theyโ€™d set up a small table next to the pastryโ€ฆ

Triple Chocolate Scotcheroos

Some people, when they travel, they look for hotels with amenities like spas or room service. Others look for hotels near restaurants or local attractions. Me? I look for ones near supermarkets. And on my recent trip through the states, my traveling companion was shocked that Iโ€™d managed to pack 3 empty suitcase into one larger one, the limit of our collective baggage allowance.ย Not toโ€ฆ

Pierre Hermeโ€™s Ketchup Macarons (Ketchup Cookies)

When you make desserts in a restaurant, the most important thing you can do is to smell anything made of plastic before you put anything in it. I remember someone made a big batch of crรจme anglaise one morningโ€ฆand that evening, when I went to serve it, I opened the lid and the overpowering smell of garlic blasted forth, rendering the whole batch useless. Chocolate Biscotti Recipe

The pastry department is always the most popular part of the kitchen amongst the rest of the staff in a restaurant. For one thing, anytime there is a staff birthday, youโ€™re called into service to make the cake for the party. And since everyone has a birthday, everyoneย has to be nice to you the other 364 days of the year. Another thing is that regularโ€ฆ
