Goat Cheese Souffle recipe

I was teaching recently in Texas at Central Market, and Iโ€™d have to say after spending a week there, itโ€™s the best supermarket in the world. I was using the marvelous citrus fruits they foraged from around the United States, including fresh yuzu, limequats, jumbo pomelos, bergamots, Seville oranges, citrons (which Iโ€™ve been trying to find in Parisโ€”anyone know where I can find one?), andโ€ฆ

Swiss Chard Tart (Tourte de blettes)

When I was in Nice a few months ago with my friends Adam and Matt, I wanted to show them some of the more unusual local specialties, ones you wouldnโ€™t come across unless you were actually in a certain region. French cooking is very regional, which is why you wonโ€™t find bouillabaisse in Paris or all that many macarons in Nice. And a lot ofโ€ฆ

Rosy Poached Quince

Itโ€™s annoying to come across a recipe raving about the taste or beauty of something exotic or unattainable. You canโ€™t please everyone (no matter how hard I tryโ€ฆ) and although not everyone can find quince in their local market, theyโ€™re not necessarily all that hard to track down. Heck, sometimes theyโ€™re right in your own back yard. Yet even if you do scope some out,โ€ฆ

Tiramisu Recipe

Although Iโ€™ve often been critical of the French trend towards putting food in silly little glasses, called verrines, once again, I find myself eating my words around here. On a recent trip to Ikea (I knowโ€ฆI know what I saidโ€ฆ) I saw these great little glass candle holders and thought theyโ€™d be perfect for servings of somethingโ€ฆlike, sayโ€ฆindividual portions of Tiramisu. Which are great forโ€ฆ

Upside Down Cake Recipe

I had big plans for this cake. I bought these gorgeous apricots, packed them up to take out to the country last weekend to make a cake. I planned to pick some rose geranium leaves to flavor the batter, and I was going to bake it and serve it proudly forth. Except someone decided to use my perfectly-ripe apricots to make some jam, and theโ€ฆ

Butterscotch Pudding Recipe

I recently got hooked on Le Grand Perdant 2. Unlike French cinema, which has a way of importing the best of America, French television has a way of importing the worst of America. Which often means reality shows. I have little patience for watching women named Bambi and Jennie compete for husbands named Tristan and Chad, but at least this one has a positive spinโ€ฆ.

Orange Sorbet Recipe

For some reason, people think I eat out all the time. I like eating in restaurants, but I really like to cook make for myself and friends. When I do, I get to pick and choose exactly what Iโ€™m going to make, what Iโ€™m going to put into it, and how to cook it. I become the proverbial free man in Paris. At least inโ€ฆ

Espresso Granita Affogato Recipe

In terms of desserts, it doesnโ€™t get much easier than this. Affogato means โ€˜drownedโ€™ in Italian, and any frozen dessert can meet this fate by tippling a little liquor or coffee over it. Classically, espresso is poured over Vanilla Ice Cream, but youโ€™d have to be pretty hard-core to pour espresso over Espresso Granita. If I did that, Iโ€™d be ricocheting off the walls aroundโ€ฆ
