Rabbit Pasta with Green Olives, Fennel, and Preserved Lemons

Some people donโ€™t like generalizations, but, wellโ€ฆthatโ€™s a generalization too, isnโ€™t it? However, you sometimes need to paint a picture in broad strokes. And differences which are specific to certain cultures are interesting, which is why many of us travel, to experience them. (Itโ€™s also what makes us all delightfully different.) Cassoulet Toast

Iโ€™m a big fan of traditional Cassoulet. And Iโ€™m not alone; a repeated question I get is โ€œWhere can I get a good cassoulet in Paris?โ€ The short answer is: To the Southwest of France. Thenโ€ฆOy!โ€ฆ as anyoneโ€ฆ

And if they did, they could afford a country house and would raise their chickens out there. But Frenchโ€ฆ
