Chocoflan

A few desserts on this blog stick with me, often because I posted them a while back, but discovering that Iโ€™d like to tweak them a little to reflect my current tastes. As anyone who cooks or bakes knows, things change over time. New ingredients get introduced (such as bean-to-bar chocolates) and we learn better or faster ways to do things the more we makeโ€ฆ

Where to Get Fresh Tortillas in Paris

Who knew that one of my most FAQs would be โ€œWhere can I find fresh tortillas in Paris?โ€ [UPDATE: There have been quite a few changes in Paris since I first posted this. I havenโ€™t had time to check and redo all the links but youโ€™re best bet for getting fresh corn tortillas is from Los Cuates which now delivers.] Yes, thereโ€™s no shortage ofโ€ฆ

Slow-Cooked Chipotle Pork

I was recently tagged in a debate on Twitter, where some of the people objected to having to scroll down a post to get to the recipe, because they didnโ€™t like scrolling. (Which was odd, since unless Iโ€™m doing it wrong, donโ€™t you need to scroll to use Twitter?) The discussion also tapped into a few peopleโ€™s dislike of a longer headnote before a recipeโ€ฆ

Pozole

Iโ€™m one of those people that doesnโ€™t order soup when I go out to eat. I guess I feel like soup is something that I should be eating at home. While words like โ€œcomfort foodโ€ and โ€œnourishingโ€ are easy-to-reach descriptions to attach to soup, I try not to overthink it. It just seems like home is the right place to be, to spoon up aโ€ฆ

Red Chile Braised Beef

We find ourselves eating in, rather than going out, more than not. For one thing, the food is often better, or just simpler. Maybe Iโ€™m getting grouchy, but after a recipe trip where I ate out at every meal, all I wanted was a plate of grilled fish or roasted chicken, and some vegetables. Or just a simple salad with some bread and cheese. Anotherโ€ฆ

La Newyorkina Mexican Ice Cream

Update: La Newyorkina closed in January, 2021. You can still get La Newyorkina products online and at selected outlets. More on their website. Before my first trip to Mexico a number ofย years ago, I didnโ€™t know Mexico was a countryย known for itsย ice cream (helado), let alone an array of other delicious sweets. I wandered through panaderias (bakeries) with the metal tray and tongs they gaveโ€ฆ

Pickled Jalapenos

Yes, I know Iโ€™ve been presenting a lot of chile pepper recipes lately. But, well, โ€™tis the season. And when nature speaks, ya gotta listen. So I promise a chocolate recipe up shortly โ€” fortunately, chocolate is an all-year round kind of thing โ€” but I wanted to preserve a nice bag of jalapeรฑos that happily made their way into my Paris kitchen. And sinceโ€ฆ

Persimmon Margaritas

A few years ago, I had a fruit emergency. To you it might not seem that urgent, but it was springtime and I was finishing a book and needed to retest aย recipe that called for persimmon puree, whichย I wanted to give it one last tryย before it went to the printer. Persimmons are fall fruits and itโ€™s impossible to find them outside of their season. Asโ€ฆ

Guacamole

Okay, show of hands โ€“ who likes guacamole more than I do? Okayโ€ฆ Now that thatโ€™s settled, who was more thrilled that I was to score a batch of freshly fried tortilla chips and a big bag of just-about ripe Haas avocados this week? Iโ€™m not asking any more questions, I promise. Because the answers were right here in my kitchen. Although what some peopleโ€ฆ
