Basil Vinaigrette

My sauce for the summer is Basil Vinaigrette. Donโ€™t get me wrong, I love pesto. But this basil-forward sauce has the punchy flavor of fresh herbs and takes less than a minute to blend together. And unlike its thicker cousin, this vinaigrette can be drizzled over everything, from fresh tomatoes and shelling beans, to risotto or roasted potatoes, and even fresh cheese, like mozzarella orโ€ฆ

One of my very favorite salads is Fattoush. There are various versions of the salad, whose name comes from fatta, which refers to the crumbled or torn pieces of flatbread in the salad. Green Salad with Peas, Green Beans, and Buttermilk Ranch Dressing

I love a big salad, especially in the summer. Actually, a big bowl of greens, one that includes lots of crunchy things, is one of my favorite things at any time of the year. Ibrik Cafe

When I walked into Ibrik cafรฉ the other day and sat down in the upstairs dining room, I saw this scenario next to me. Cobb Salad

The first avocado I ever had was at Scandia restaurant in Los Angeles and I hated it. The slippery little green cubes avoided my fork, until finally, I managed to spear one. Fresh Corn, Tomato, Avocado and Basil Salad

While in the states for a vacation this summer, I took advantage of the overload of gorgeous heirloom tomatoes, fresh ears of corn, and generous bunches of basil at the farmersโ€™ markets to make this salad over and over (and over and over) again.
