Homemade Corned Beef

My desert island food is corned beef. Hot, piled up on a sandwich, between two pieces of rye bread withย spicy brown mustard smeared liberally inside, corned beef is the one food that I could find myself being happily enjoying if trapped on a desert island. (With unlimitedย ice-cold pitchers of tropical cocktails, of course.) I also want cole slaw and half-sour pickles, too. Although if truthโ€ฆ

Faux Gras: Vegetarian mushroom pate

People often think of Paris as a museum stuck in the past. Sure, one of the things we all love about Paris is the old charm that persists in the architecture, the culture, the cuisine, and in some cases, the way of thinking. But itโ€™s hard to stop new ideas, especially when they become widely adopted,ย as the next generationย comes along with different ideas and expectations.ย โ€ฆ

Fried Halloumi Cheese

When I was in Beirut, I stayed at a hotel with amazing breakfasts. Although Iโ€™m not one that likes to inflict myself on the public in the early hours of the day (when Iโ€™m not exactly at my best), the breakfasts with their freshly baked Arabic bread and zaโ€™atar-filled croissants helped me make the transition from my blissful slumber, and through that difficult period whereโ€ฆ

A Visit to Abu Kassem Zaโ€™atar Farm

One thing you learn quickly if you travel to, or somehow explore otherwise, the various cuisines of the Middle East, is that every country, and seeminglyโ€ฆevery single person, has their own idea of what zaโ€™atar is. And theyโ€™re very (very) attached to it. So much so that a chef in a restaurant in Jerusalem rolled up his sleeve to show me a tattoo of whatโ€ฆ

Roasted Tomato Soup with Corn Salsa

If I read one more recipe that begins with saying that the recipe is the perfect way to use up the overload of summer tomatoes, Iโ€™m going to scream. Okay, in deference to my neighbors, I wonโ€™t. But to me, there is no such thing as having too many tomatoes. Thatโ€™s just crazy-talk. We donโ€™t have the overload of great tomatoes in Paris that folksโ€ฆ

La Graineterie du Marche

There are a number of โ€œmust-doโ€ lists in Paris, places where people just have to go while theyโ€™re here. Often people have limited time, and I hear ya, so I might suggest the departments stores on the Boulevard Haussman, Printempts and Galeries Lafayette (although even since Printemps started charging โ‚ฌ1,5 to use the restrooms, Iโ€™m inclined to go to the Galeries Lafayette, just on principle.)โ€ฆ

Labneh

I have always loved Middle Eastern foods. The fresh vegetables, the liberal use of herbs and seasonings, including a touch of spiciness at times, and the casual way of eating that the food encourages. Meze is the term thatโ€™s used to define all the โ€œlittle platesโ€ that get brought out to begin in a meal, served in little bowls often with pools of olive oilโ€ฆ

Lebanon

UPDATE: My visit to Lebanon was in 2013 and I had a marvelous time visiting. In recent years, a powerful explosion rocked Beirut, and subsequent social and economic changes happened, and I havenโ€™t been back. Before planning a trip, do some reading or talk to a travel professional about visiting Lebanon and what to expect. The Middle East is a pretty fascinating place, and onโ€ฆ

Simple Polenta

Iโ€™ve been a busy boy the last few weeks, hunkering down finishing a project thatโ€™s Iโ€™m working on night-and-day. And unfortunately, itโ€™s not even allowed me time to go to the market to do much food shopping. Quelle horreur! So Iโ€™ve been raiding my freezer (which is actually a good thingโ€ฆ) and rummaging through my cabinets in search of things that I can sustain myselfโ€ฆ
