Washington Post Story & Recipes

I had a terrific time with fuzzy-faced food editor Joe Yonan when he came to Paris recently, and he was such a super dude, that I took him to my favorite market to meet some of my friends and vendors. You can read the story, American Blogger in Paris in todayโ€™s Washington Post.

Nomiya @ Art Home

Iโ€™m not much for trendy restaurants. And I donโ€™t really care for chefs that are trying to show-off, especially when they donโ€™t have les bourses to pull it off. I recall a particularly alarming mealโ€ฆand the bill, at the end of itโ€ฆat a very, very expensive restaurant where I was presented with half of a caramelized shallot which arrived in front of me with aโ€ฆ

Caramelized White Chocolate Recipe

I donโ€™t like to make promises I canโ€™t keep. So when I posted on my classes at the Lโ€™รฉcole du Grand Chocolat Valhrona, everyone began clamoring for the secret technique for the caramelized white chocolate that was shown. Technically, even though I didnโ€™t promise anything, I canโ€™t say I blame youโ€”if I saw a picture of it, Iโ€™d want to know how to make it,โ€ฆ

White Chocolate & Sour Cherry Scones

The year was 1999 and my first book had come out and was nominated for one of those terribly-important cookbook awards. During the dinner and awards presentation, everyone thought I was a shoe-in and so I was seated right up in front, sharing a table with Graham Kerr, Claudia Rodin, some woman from Sweden (I had no idea who she was; the only Swedish womenโ€ฆ

Askinosie White Chocolate, Kallari Dark Chocolate & Hazelnut Whatever-You-Want-To-Call-It

Askinosie White Chocolate Thereโ€™s nothing odder to me than people who say, โ€œI donโ€™t like white chocolateโ€ฆbecause itโ€™s not chocolate!โ€ Which is like saying, โ€œI donโ€™t like white wineโ€ฆbecause itโ€™s not Champagne!โ€ In each case, both are similar, but entirely different creatures and to compare them is kinda silly. I used the scoff at the losers who liked milk chocolate, until I started appreciating itโ€ฆ

Chocolate Dipped White Chocolate-Berry Popsicles

Of course, I picked the hottest day of the summer to make popsicles. After the success of my Vietnamese coffee popsicles, I thought itโ€™d be fun to try something dipped in chocolate. In retrospect, am I insane? Our summer in Paris has been uneven; some cool days, and a few nice warm ones. Unfortunately the day I decided to make chocolate-dipped popsicles was the oneโ€ฆ

Chocolate FAQs

My chocolate has gray streaks. It is okay to use? Thatโ€™s called bloom and it happens when the chocolate melts or gets warm, and then cools again without being tempered. When you buy chocolate, it is already tempered. However if itโ€™s exposed to heat or melted, it can fall out of temper and lose its suspension. (You can read my instructions for how to temperโ€ฆ

Gale Gandโ€™s White Chocolate Sorbet Recipe

Gale Gand is a terrific baker and her book, Chocolate & Vanilla, is a double-sided treat thatโ€™ll have you flipping the book over and over almost as much as youโ€™ll flip over the chocolate and vanilla desserts inside! Last weekend I was invited to a birthday party, and as I flipped through the pages of her book, I was intrigued by the delicious-looking recipe forโ€ฆ
